Plaster Rock is a village on the Tobique River in Victoria County, New Brunswick, Canada. As of 2001 the population was 1,219.
The village was founded in 1881 by Hezekiah Day and named for the gypsum found in the area, which is heated to produce plaster.
The major industry in Plaster Rock is a sawmill owned by Fraser Papers.
